Something to keep in mind. Some sheitels will not hold a curl. Also, you CAN burn the hair if you hold the curling iron for too long, so curl at your own risk!

Which sheitals won't hold a curl?

Some really straight hair does not hold a curl. I have had Asian friends lament this problem to me, as well as Caucasian friends. Usually hair that doesn't curl is very fine and naturally extremely straight. It has to do with the hair cuticle. Some hair of this type will stay with enough product (hair spray etc.) but I also know people who will use POUNDS of product and their hair still ends up straight by the end of the evening.
Why not ask a sheitel macher when buying a wig to use a curling iron on a strand and see how it comes out. Within an hour you will see how much if falls...
How long should I expect a sheitel that does hold a curl to actually hold it?
Well, it depends on preference. How long do you want your curly sets to last? For example, I had my shabbos sheitel (my freeda) curled before Rosh Hashana and it was still holding the curl by the time I took it to be washed for Pesach.
If you get your sheitel washed every month you would probably want the curls to last for a month. Alternatively, some people really like the look of fallen curls, in which they turn into a slight wave. In such a situation it would be desired for the curls to last maybe a few days or a week and then be just wavy or bodied for the rest of the time. If the sheitel goes from curled to wavy then its probably a sheitel that likes being curled.
If a sheitel goes from being curled to STICK straight on its own just from gravity, then the sheitel's hair wants to be straight and will probably not hold curl for a very long time. For example, my JAP wig. It air dries stick straight and if I curled it it would return to straight within a half day.
how many seconds should I hold the curl in the curler, if I'm using lowest heat? I'm super scared, but less than a full 7 seconds or so, I don't think I get a curl.
Gosh, she is so talented. That shaitel looks spectacular, and she made it look easy...

What size curling iron do you recommend?
The wig is 26 inches!!! VERY LONG. I recommend 1 inch curling iron, any bigger than that and the curls fall into these HUGE wide pieces...
